Ingredients:
- 1 cup of lentils
- 1 cup of black beans
- 1 cup of kidney beans
- 1 chopped bell pepper
- 1 medium onion
- 3 cloves of minced garlic
- 1 can of diced tomatoes
- 4 cups of broth
- 1 tablespoon of chili powder
- 1 teaspoon of paprika
- 1 teaspoon of ground cumin
- ¼ teaspoon of black pepper
- Olive oil
Instructions:
- Follow the directions on the bags for beans and lentils.
- Chop onions and bell pepper.
- Sauté onions and pepper in a large pot with olive oil until soft.
- Add seasonings and garlic and stir for 1-2 minutes.
- Add tomatoes, broth, beans, and lentils and stir.
- Adjust heat so broth begins to boil.
- Then lower the heat and allow the chili to simmer in a pot covered.
- Cook for around 30 minutes or until beans are tender, stirring occasionally.
- Add salt and pepper to taste.
