Ingredients:
- ¼ cup of Dixie Lily cornmeal
- ¼ cup of all-purpose flour
- 2 cups of corn
- ¼ cup of half and half
- 1 egg
- ½ cup of shredded cheese of your choice
- 1 tsp of paprika
- ½ tsp of salt
- ¼ tsp of pepper
- 1 tbsp of cooking oil
Instructions:
- Combine dry ingredients in a large bowl
- Mix in corn
- In a separate bowl, whisk together egg and half and half
- Add wet ingredients to large bowl and mix well
- In a skillet, heat oil over medium heat
- With a spoon, pour ¼ of mixture into pan at a time to form patties
- Cook for 4 minutes or until brown on both sides
