Corn Fritters

Ingredients:

  • ¼ cup of Dixie Lily cornmeal
  • ¼ cup of all-purpose flour
  • 2 cups of corn
  • ¼ cup of half and half
  • 1 egg
  • ½ cup of shredded cheese of your choice
  • 1 tsp of paprika
  • ½ tsp of salt
  • ¼ tsp of pepper
  • 1 tbsp of cooking oil

Instructions:

  1. Combine dry ingredients in a large bowl
  2. Mix in corn
  3. In a separate bowl, whisk together egg and half and half
  4. Add wet ingredients to large bowl and mix well
  5. In a skillet, heat oil over medium heat
  6. With a spoon, pour ¼ of mixture into pan at a time to form patties
  7. Cook for 4 minutes or until brown on both sides
