Ingredients:
- ½ cup olive oil
- 1 cup of cooked black beans
- 1 cup of cooked black eyed peas
- 1 ½ cups of sweet corn
- 1 medium red onion
- 2 medium tomatoes
- ½ cup of chopped bell pepper
- ⅓ cup of chopped cilantro
- ¼ cup of lime juice
- 1 teaspoon of salt
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of sugar
- ⅓ cup of white wine vinegar
Instructions:
- Follow the directions on the package for cooking black beans and black-eyed peas.
- Combine olive oil, white wine vinegar, lime juice, sugar, and spices and whisk together
- Add the remaining ingredients to the mixture and slowly combine until fully combined.
- Refrigerate for 2 hours then serve.
