- 4 boneless chicken breasts
- 5 cups of chicken broth
- 2 cups of yellow rice
- 1 medium yellow onion
- 3 bay leaves
- Put chicken, whole onion, and bay leaves in the crock pot.
- Add 4 cups of broth to the pot.
- Cook for 4 hours on high or until the chicken is fully cooked.
- Remove onion and bay leaves.
- Add the remaining broth and rice to the pot and mix well.
- Cook for 1 hour or until rice is cooked.
- Add salt and pepper to taste
