Mexican Brown Rice

Ingredients:

  • 1 cup of China Doll or Dixie Lily brown rice
  • ½ cup of mild salsa
  • 1 tsp of cumin
  • ½ tsp of salt
  • 1 tsp of lime juice

Instructions:

  1. Add 3 cups of water to a pot and bring to a boil
  2. Add rice and bring to a boil again
  3. Reduce heat and add salsa, cumin, and salt
  4. Cover and let simmer for 45 minutes
  5. Add extra water if the mixture is too chunky
  6. Remove from heat and let rice sit covered for 15 minutes
  7. Top with cilantro and lime
