Ingredients:
- 6 cups of chicken broth
- 1 rotisserie chicken
- 1 cup of white rice
- 1 yellow onion
- 3 carrots
- 2 celery stalks
- 1 teaspoon of minced garlic
- 1 teaspoon of Italian seasoning
- 1 teaspoon of parsley
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 1 tablespoon of olive oil
Instructions:
- Remove the meat from the rotisserie chicken and cut it into small pieces.
- Heat olive oil in a large pot over medium-high.
- Chop onions, carrots, and celery.
- Add vegetables to pot and stir for 3 minutes or until onions fully cook.
- Add seasonings and garlic and cook for 1 minute.
- Stir in chicken, rice, and broth and bring to a boil.
- Then, reduce heat, cover the pot, and simmer for 35-45 minutes or until rice is tender, stirring occasionally.
- Serve warm.
